Ed Kenney Talks Hawaiian Food at StarChefs

Like many areas with indigenous unique products, Hawaii has been rediscovering them in the venue of fine dining. Recently, it seems, the rest of the world has been starting to take notice. Chef Ed Kenney of Town Kaimuki in Honolulu came to NYC at the beginning of the month along with his Chef de Cuisine, Dave Caldiero, to make some dishes reflective of their Hawaiian influenced cooking at the recent StarChefs ICC. I caught up with them while they were preparing pa’i’ai, a paste of taro root to be part of a dish featuring Hawaiian culinary style during a wine pairing exercise. Kenney and Caldiero discuss their pai’i’ai and other elements of Hawaiian cuisine in this short video that supports their mantra, “Local first, organic whenever possible, with Aloha always.”
