Sunday Photo – Simply Delicious!

These candy-like fresh Nantucket bay scallops, from Pura Vida Seafood purchased at the Saratoga Farmers Market, are soooooo delicious raw, they require nothing else. I wanted to provide a little something to enhance them, but I did not want to mask their inherent flavor or texture. I gave them a light wash of home-made guajillo chile oil, a brief squeeze of lime juice and a light shower of sea salt. There was just enough of each of the added ingredients to make its presence known without hindering the native characteristics of the scallops – just what I had been hoping for. Cooking may be about altering ingredients, but sometimes it is best to just let great product be great.
