Thanksgiving is around the corner. The Turkey always gets the headlines, but this is also a time when the humble squash also gets to shine. Baked in pies, puréed and served as soup and cooked so many other ways, various types are versatile and delicious.  What will you be doing with squash?

    Butternut squash soup. Stuffed Acorn squash with a hint of maple syrup.
    Last year we went all vegetarian and stuffed a Hubbard squash instead of a turkey!
    We love our root vegetables!
