Mexican chef Enrique Olvera of the restaurant Pujol in Mexico City is one of my absolute favorite chefs anywhere. His cooking is clean, focused and pure of flavor. He has also managed to refine his native Mexican cuisine, while staying true to its roots and spirit. This summer I had the pleasure of feasting on two meals at Pujol and I just recently partook of a collaboration with Alex Stupak and Lauren Resler at Empellón Cocina in New York City as the inauguration of The Push Project, which is intended to be a series of collaborative dinners at Empellón Cocina. The meal was brilliant, fusing styles and flavors into a coherent and scrumptious whole, never losing sight of the delicious.
