The Moles of Puebla – A Conversation With Chef Liz Galicia

Few dishes in Mexico are more legendary than Mole and  Mole Poblano may be the most famous of all. Chef Liz Galicia of Puebla’s El Mural de Los Poblanos has quickly developed a reputation as an ardent student of moles and other traditional Poblano dishes. She assiduously tracks down and replicates traditional recipes from around Puebla including Mole Poblano and others and has developed a deserved reputation of making some of the very best Poblano dishes to be found in a restaurant.  I recently had the opportunity to speak with her about moles.
