Il Chiasso’s Stuffed Sardines

Living in upstate NY, when I get good quality fresh sardines, it is such a rare event, I tend to just cook them simply on the grill. On the island of Elba, off the Tuscan coast of Italy, fresh sardines are common, pristine and a major protein source. That doesn’t make them any less delicious, but it does mean they have many different ways of preparing them – each delicious. Here, we see how they make stuffed sardines at the captivating Il Chiasso in Capoliveri on Elba. The sardines are prepared by the chef’s assistant, Marco and finished by the inimitable owner, Chef Luciano Casini. Enjoy!
