Sunday Photo – Cajun Crawfish Pie

My anesthesia colleague, Spencer Bordelon and his wife, Tressie hail from Louisiana Cajun country not far from Rayne, the home of Hawk’s, a bastion of amazing boiled crawfish and other delights. Both Spencer and Tressie are quite nimble in the kitchen and they cook their Cajun family recipes without taking shortcuts. Their Cajun dishes are so good that they have taken to preparing some dishes for friends. I jumped on this crawfish pie. The delicious, golden crust was thick enough to hold in all the wonderful, spicy moisture  and retain its shape without falling apart. The filling was incredible – full of hot Cajun spice and delectable Louisiana crawfish that they had shipped up specially for this round of pies. There was a full pound of the bugs in this pie.
