Rose Weiss, a culinary extern at Gramercy Tavern won the first commis competition sponsored by the Bocuse d’Or USA Foundation to identify young rising talent in the culinary world. She graduates from the French Culinary Institute on Monday. Thomas Keller said that her winning formula had much to do with the immaculate order she kept in her kitchen in addition to the great taste of her food. She had to be good to beat the other three candidates, each of whom did a great job. The competition for the next American Bocuse d’Or candidate takes place today at the Culinary Institute of America in Hyde Park.
Correction: This post has been edited to reflect that the Commis competition was simply to identify and reward young rising talent and not a competition to choose the commis for the Bocuse d’Or USA team for the next Bocuse d’Or competition in Lyon, France.
