Fennel and Tomato Salad

With the rain and winds of Irene coming down around my house and my family still away thanks to the storm, I was in the mood for a little mood brightening. What better way than to combine the colors of red and green for a little Christmas cheer during a prolific August tropical storm? I sliced a whole Denison Farm  fennel thin on a mandoline up to the stalk, added some chopped fronds, a rough-cubed red tomato, olive oil, Blis #9 Sherry maple Double Solera vinegar, ground pepper and grated cacciocavallo cheese  to make a truly refreshing, delicious and uplifting salad.
